Was treated to a very nice dinner on Friday night at my friend April’s house. I have to say that I was blown away by the meal she served and she seemed amused at me since according to her it was very easy to make. She gave me a copy of the recipe and I just have to share it.
Meatball Tortellini
1 pkg (14 oz) Frozen Meatballs
2 cups Uncooked Cheese Tortellini
2 cans Condensed Cream of Mushroom or Chicken Soup
2 ¼ cups Water
½ tsp Paprika
½ tsp Garlic Powder
Pinch of Cayenne, Dried Thyme and Ground Cumin
In a slow cooker combine the vegetables, meatballs and tortellini. In a bowl mix together soup, water and seasonings. Pour the mixture over the items in the crock-pot and stir well. Cover and cook on low for 3-4 hrs or until the pasta is tender.
It was absolutely delicious! I just got the crock-pot going at the house for dinner and I can’t wait to see what the hubby thinks about it.
