The Bavarian Inn stopped by the NBC25 Today kitchen set on Wednesday to show us how to make a German specialty, Blaukraut. It resembles saurkraut but it contains blue cabbage.
Below is the recipe:
Bavarian Inn Blaukraut:
6 ounces bacon
12 ounces onion, chopped (1 1/3 cup)
¼ teaspoon Smoke House/Liquid Smoke
2 pounds blue or red cabbage, shredded
1½ cups vinegar
1 cup sugar
1¼ teaspoons salt
3¼ cups water 1 apple, sliced
Directions:
1. Cut bacon into small pieces; fry till quite beige in color.
2. Add onion and fry till dark beige and soft.
3. Remove from heat and add Smoke House.
4. Mix vinegar, sugar, salt and water.
5. Add blue cabbage and stir. Add apple and the bacon mixture.
6. Bring to a boil; cover and simmer for about 20 minutes or till cabbage is still a little chewy.
7. Stir every 10 minutes.
Yield: 10-12 servings.
