Brad shows us some very, very good crab cakes and crab stuffed mushrooms
NBC 25 STUDIOS -- Chef Brad Valley is showing us some fantastic dishes based around crab.
First we have Crab Stuffed Mushrooms and then we have a recipe for crab cakes!

CRAB STUFFED MUSHROOMS
Ingredients:
20mushrooms
1/2lemon, juiced
2 cups water
1/4 cup minced onions
1/4 cup minced celery
1-1/2 teaspoons sour cream
1/4 cup softened cream cheese
1 tablespoon bread crumbs
1/2 teaspoon lemon fresh juice
1/8 teaspoon garlic powder. Add an additional 1/8 teaspoon fresh garlic if you love garlic!!
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup crabmeat
1/8 cup olive oil
Directions
Preheat oven to 350 degrees F.
Wipe the mushrooms with a lightly damp paper towel. Remove stems saving about half of them discard the rest. Mince stems
and set aside. Place mushroom caps in a large bowl. Add the olive oil making sure all the mushrooms are coated. Add lemon
juice and toss.
You may use a blender or food processor, making sure not to over mix. Mix just enough to combine. Thoroughly mix the onions,
celery, sour cream, cream cheese, bread crumbs, lemon juice, garlic powder and salt. Transfer the mixture to a medium bowl
and gently mix in the crabmeat by hand.
Fill the mushroom caps with the mixture.
Bake in the preheated oven 7 to 10 minutes, until lightly brown
* You may also top with cheese of your choice. Shredded parmesan works well
** You can substitute the crab meat with Italian sausage if you don’t like sea food
CRAB CAKES
Ingredients:
1 egg
3 tablespoons mayonnaise
4 teaspoons lemon juice
1/8 teaspoon red pepper flakes
1 teaspoon dried tarragon
1 teaspoon dried tarragon
1 tablespoon minced green onions
8 ounces crabmeat
½ cup crushed buttery crackers
½ tablespoon butter
½ tablespoon olive oil
1/8 teaspoon pepper
1/8 teaspoon salt
Directions:
In a medium bowl, whisk together egg, mayonnaise, lemon juice, red pepper flakes, tarragon, and green
onions (scallions), salt and pepper. Gently stir in crabmeat, being careful not to break up meat.
Gradually mix in cracker crumbs. You can add more or less crackers depending on the consistency you
would like.
Heat butter and olive oil in a skillet over medium heat. Form crab mixture into 4 patties. Place patties in
skillet, and cook until golden brown, about 5 to 6 minutes on each side.
