Dr. Dan's easy crock pot meals

If you don't have time for a fancy dinner. Get out the crock pot. Saginaw chiropractor Dr. Dan Kehres says it's an easy way to prepare a family meal. And yes, it's healthy. The former college running back turned health food guru has prepared so many meals on NBC 25 Today, we accidentally called him "Chef Dan". Here's what he was cooking today:

Recipe: Crockpot Lemon Parsley Fish 

Crockpot recipes are easy to make, leaving no excuse not to eat healthy! Enjoy this crockpot fish recipe:

  • 1 1/2 lbs fish fillet (I used cod) 
  • 1/2 onion, chopped 
  • 2 tbsp parsley 
  • 4 tsp olive oil 
  • Grated rind of 1 lemon 
  • Grated rind of 1 orange
  • Dash of salt and pepper 

Put fish in a buttered crockpot, place ingredients on top. Cook on low for 1 1/2 hours.

Looking for a unique, healthy and simple crockpot recipe? Try Chipotle Mango Chicken:

Ingredients:

  • 1 lb. chicken breast 
  • 1 can coconut milk (available at Kehres Health in Saginaw) 
  • 1 tbsp. chipotle powder 
  • 2 mangos, cut in cubes

Cook on low for 5 to 6 hours.

Want to make it even easier? Mix all the ingredients in a gallon-size freezer bag (including raw chicken), label with cooking instructions and store in the freezer until ready to use.


When ready to eat, thaw in the refrigerator for 24 hour and cook on low for 5 to 6 hours.
